Bahan Membuat Kaledo Khas Palu :
800 g daging iga sapi
3 L air, untuk merebus
5 lembar daun jeruk
2 lembar daun salam
2 batang serai, memarkan
2 sdt
1 sdt garam
1 sdt gula pasir
1 sdm asam jawa, larutkan dengan 2 sdm air
15 buah cabai rawit hijau, haluskan
15 Bawang merah goreng
15 Singkong kukus atau ubi kukus
Langkah Membuat Kaledo Khas Palu :
Rebus iga bersama 1,5 liter air hingga mendidih dan buih kotornya keluar. Angkat. Buang air rebusannya.
Masak kembali iga bersama sisa air, daun jeruk, daun salam, dan serai hingga mendidih.
Tambahkan Royco Kaldu Sapi, garam, dan gula. Kecilkan api, masak hingga hampir empuk. Masukkan air asam jawa dan cabai rawit, aduk. Masak hingga daging iga empuk. Angkat.
Taburi bawang goreng dan sajikan bersama singkong atau ubi kukus.
