Bahan Membuat Dori Sambal Matah :
300 g Ikan Dori (fillet setebal 2 cm panjang 5 cm)
500 ml Minyak Goreng
Adonan :
150 g Tepung Terigu
4 g Baking Powder
200 ml Air
Sambal Mattah :
80 g Bawang Merah (slice tipis)
15 g Cabe Rawit (slice tipis)
1 Batang Sereh (slice tipis)
5 lembar Daun Jeruk (slice tipis)
2 g Garam
10 g Gula Pasir
5 g Chicken Powder
10 g Air perasan lemon
50 ml Minyak Goreng
Langkah Membuat Dori Sambal Matah :
Membuat Dori Sambal Matah.
Siapkan bahan Adonan : Tepung Terigu, Baking Powder, Chicken Powder dan Air lalu mix hingga benar – benar tercampur rata tidak ada tepung yang menggumpal.
Masukan ikan dori yang sudah di fillet kedalam adonan tepung
Panaskan minyak dengan api sedang,
Goreng ikan dori sampai berwarna golden brown lalu angkat dan sisihkan
Membuat sambal matah: panaskan minyak goreng sebanyak 50 ml, siapkan mangkuk anti panas.
Campurkan semua bahan sambal matah : Bawang Merah (slice tipis), Cabe Rawit (slice tipis), Sereh (slice tipis), Daun Jeruk (slice tipis), Garam, Gula Pasir, air perasan lemon dan Chicken Powder lalu aduk hingga tercampur rata dan siram dengan minyak panas sedikit demi sedikit sambil terus diaduk.
Fry the fish.
Put the fish into the batter and make sure it’s evenly coated.
In a pan, heat up the oil over medium heat and fry the dory fish until golden brown. Set aside.
Making sambal matah.
To make sambal matah, heat up the cooking oil.
In a heat resistant bowl, add shallots, cayenne pepper, lemongrass, lime leaves, salt, sugar, lemon juice, chicken powder and mix well.
Gradually pour the hot oil over the chilies and mix well.
