Bahan Membuat Kambing Gepuk Bumbu Tumbuk :
500 g daging kambing, potong dadu 3 cm
2 lembar daun salam
3 cm lengkuas, memarkan
2 batang serai, ambil bagian putihnya saja, memarkan
1 sdm kecap manis Bango
2 sdt garam
½ sdt gula pasir
2 sdt air asam jawa
1.200 ml santan dari 1 butir kelapa
Bumbu, haluskan:
12 butir bawang merah
4 siung bawang putih
2 buah cabai merah
3 buah cabai merah keriting
3 butir kemiri, sangrai
1 sdm ketumbar butiran
¼ sdt jinten
Langkah Membuat Kambing Gepuk Bumbu Tumbuk :
Rebus daging, daun salam, lengkuas, serai, bumbu halus, garam, gula pasir, dan air asam sampai matang.
Matikan api. Angkat dagingnya.
Pukul-pukul dagingnya hingga ketebalan ½ cm dengan bantuan pemukul daging.
Nyalakan api. Masak kembali sambil diaduk sampai matang dan meresap.
