Bahan Membuat Rabeg Kambing :
200 g usus kambing, kepang
150 g hati kambing, potong dadu
350 g daging kambing, potong dadu
2 batang serai, ambil putih, memarkan
4 cm jahe, memarkan
1 L air untuk merebus
4 lembar daun jeruk, buang tulang
6 butir bawang merah, iris tipis
2 cm jahe, iris tipis
1 buah tomat merah, potong-potong
½ sdt merica putih bubuk
½ sdt garam
6 butir cengkih
4 cm kayu manis
½ sdt pala bubuk
600 ml air
3 sdm
1 batang daun bawang, potong 1/2 cm
¼ sdt cuka
1 sdm minyak, untuk menumis
Langkah Membuat Rabeg Kambing :
Rebus usus kambing, daging kambing, hati kambing, jahe, serai, serta daun jeruk sampai matang. Angkat dan tiriskan.
Tumis bawang merah dan jahe sampai harum. Tambahkan daging kambing, usus kambing, dan hati kambing. Aduk rata.
Masukkan tomat, garam, lada putih bubuk, cengkeh, kayu manis, dan pala bubuk. Aduk rata.
Tuang air. Masak di atas api kecil sampai meresap. Tambahkan Bango Kecap Manis, daun bawang dan cuka. Aduk rata.
