Bahan Membuat Gulai Kambing :
700 gram daging kambing campur dengan iganya
400 ml santan encer
2 batang serai (memarkan)
daun jeruk secukupnya
1 ruas jari lengkuas (memarkan)
2 cm jahe (memarkan)
1 bungkus Lada Kobe
1 sachet Saus Tiram Selera
garam secukupnya
gula secukupnya
5 buah cabe rawit
12 siung bawang merah
10 siung bawang putih
6 butir kemiri
1/3 sendok teh jinten atau ketumbar halus
Langkah Membuat Gulai Kambing :
Potong-potong daging kambing.
Panaskan santan encer.
Masukkan potongan daging kambing.
Tambahkan serai, daun salam dan daun jeruk. Tambahkan lengkuas dan jahe. Aduk rata dan masak sampai daging empuk.
Di tempat terpisah, tumis semua bumbu halus hingga harum dan matang. Masukkan tumisan ke dalam panci rebusan daging.
Tambahkan Lada Kobe dan Saus Tiram Selera. Tambahkan gula, garam dan santan kental. Aduk rata dan masukkan cabe rawit. Masak hingga kuah menyusut.
Angkat dan sajikan.
