Bahan Membuat Tengkleng Kambing :
700 g daging iga kambing muda
100 g nanas parut
3 cm lengkuas, memarkan
3 lembar daun jeruk
4 butir kapulaga
1 butir bunga lawang
5 butir cengkih
1 sdt
100 ml
300 ml air
3 buah tomat hijau, belah 2 bagian
8 buah cabai rawit utuh
3 sdm minyak samin, untuk menumis
8 butir bawang merah
4 siung bawang putih
7 buah cabai rawit merah
3 butir kemiri
2 cm jahe
2 cm kunyit
1 sdm ketumbar
1 sdt merica putih bubuk
½ sdt garam
Langkah Membuat Tengkleng Kambing :
Lumuri daging iga kambing dengan nanas parut hingga merata. Diamkan selama 40 menit, bilas dengan air. Tiriskan. Sisihkan.
Panaskan minyak samin, tumis bumbu halus bersama lengkuas, daun jeruk, kapulaga, bunga lawang, dan cengkih hingga harum. Masukkan daging iga kambing, aduk rata.
Masukkan Royco Kaldu Sapi, Bango Kecap Manis, dan air, aduk. Masak hingga mendidih, kecilkan api.
Tambahkan cabai rawit dan tomat. Masak hingga iga kambing empuk. Angkat. Sajikan.
