600 gr daging kambing bagian paha, potong potong1 liter santan (1 butir kelapa)- 500 ml encer dan 500 ml kental3 batang serai, memarka5 lembar daun jeruk4 cm lengkuas, memarkan3 cm kayu manis5 sdm minyak untuk menumis2 sdm kecap manis bangoDaun kari Bumbu halus: 10 butir bawang merah5 siung bawang putih1 sdm bubuk kari2 sdt garam½ sdm gula pasir10 buah cabai merah keritingAtau jika tidak pakai bubuk kari bisa diganti dengan bumbu sbb:2 cm jahe4 cm kunyit4 butir kemiri sangrai½ sdm ketumbar sangrai4 butir cengkeh sangrai2 butir pekak sangrai3 butir gardamon, sangrai
Langkah Membuat Kari Kambing :
Tumis semua bumbu halus, serai, , daun jeruk, lengkuas, kayu manis, hingga matang betul dan harumTambahkan daging kambing, tumis hingga berubah warna , masukkan santan encer, masak hingga daging kambing lunak dengan api sedang sambil sesekali diaduk agar santan tidak pecah..Tambahkan santan kental masak dengan api kecil hingga matang dan daging lunak betul lalu masukkan daun kari dan kecap manis bango
