Bahan Membuat Ayam Tuturuga :
Ayam, potong 12 bagian: 1 kg
Air jeruk nipis: 2 sdm
Garam: 1 sdt
Serai, geprak: 2 batang
Jahe, geprak: 5 cm
Daun pandan, potong kecil: 2 lembar
Daun jeruk: 5 lembar
Santan: 1 liter
Kemangi, petik daunnya: 2 batang
Cabai merah besar: 5 buah
Bawang merah: 6 butir
Bawang putih: 4 siung
Kemiri, sangrai: 5 butir
Kunyit, bakar: 3 cm
Garam: 1 sdt
Gula: 1 sdt
Merica: 1/2 sdt
Langkah Membuat Ayam Tuturuga :
Lumuri ayam dengan air jeruk dan garam, diamkan 15 menit lalu cuci bersih.
Panaskan minyak, tumis bumbu halus sampai harum.
Masukan serai, jahe, daun pandan, dan daun jeruk.
Masukkan ayam, masak hingga daging ayam berubah warna.
Tuang santan aduk terus sampai mendidih, masak sampai ayam matang dan kuah mengental.
Lalu masukkan daun kemangi, aduk rata.
Angkat dan sajikan.
Sobek daun jeruk sebelum di masukan ke tumisan agar wangi.
