Bahan Membuat Ati Ampela Bumbu Rujak :
Marinated :
1 kg Ati Ampela
1 butir Jeruk Nipis
7 g Garam
Bumbu Halus :
30 g Bawang Merah
20 g Bawang Putih
20 g Kemiri
30 g Cabe Rawit Merah
30 g Cabe Merah Keriting
3 lembar Daun Salam
3 lembar Daun Jeruk
10 g Lengkuas (geprek)
1 batang Sereh (geprek)
3 g Garam
7 g Gula
13 g Chicken Powder
30 g Asam Jawa (dilarutkan dengan air 50 ml)
200 ml Air
Langkah Membuat Ati Ampela Bumbu Rujak :
Merebus Ati Ampela.
Cuci bersih ati ampela lalu marinated dengan garam dan perasan jeruk nipis lalu diamkan 15 menit.
Rebus ati ampela bersama : Daun Salam, Daun Jeruk, Lengkuas dan Sereh sampai matang setelah matang angkat dan cuci hingga bersih
Potong 2 ati dan ampela ayam lalu sisihkan.
Membuat Ati Ampela Bumbu Rujak.
Haluskan bahan : Bawang Merah, Bawang Putih, Kemiri, Jahe, Kunyit, Cabe Rawit Merah dan Cabe Merah Keriting.
Lalu tumis hingga matang dan mengeluarkan minyak, lalu masukan ati ampela kedalam bumbu tumis dan aduk hingga rata, lalu tambahkan air putih dan air asam jawa aduk kembali lalu masukan seasoning : Garam, Gula, Chicken Powder dan masak hingga air mengering dan merata menggunakan api sedang. Lalu angkat dan sisihkan.
Blend and fry the spices.
In a blender, add shallots, garlic, candlenut, ginger, turmeric, red cayenne pepper and curly red chilies. Blend well.
In a saucepan, over medium heat, add some oil and sauté the blended paste until cooked and fragrant with oils released. Remove excess oil.
Add liver and gizzard.
Add liver and gizzard into the sauteed paste. Stir well.
Add water, tamarind water and stir well.
Add salt, sugar, chicken powder and cook till the water is reduced.
Remove and set aside.
