Bahan Membuat Tengkleng Kikil :
200 g daging tetelan kambing
200 g kaki kambing
2 batang serai, memarkan
5 lembar daun jeruk, buang tulang
5 cm jahe, memarkan
2 lembar daun salam
3 cm lengkuas, memarkan
2 sdm
1.5 L santan encer dari 1 butir kelapa
500 ml santan kental dari 1 butir kelapa
4 sdm minyak, untuk menumis
5 butir bawang merah
3 siung bawang putih
5 butir kemiri
1 sdm ketumbar butiran, sangrai
5 cm kunyit
3 cm lengkuas
½ sdm gula merah
½ sdm garam
Langkah Membuat Tengkleng Kikil :
Rebus daging kambing dan kaki kambing dengan santan encer.
Tumis bumbu halus, daun salam, daun jeruk, lengkuas, jahe, dan serai hingga harum.
Lalu, masukkan tumisan bumbu ke dalam rebusan kambing. Masak hingga empuk.
Tambahkan Bango Kecap Manis. Aduk rata.
Masukkan santan kental. Didihkan sambil sesekali diaduk. Sajikan selagi hangat.
